Just made this salad for lunch today…..Amazing.  Only recommend it to people who like Blue Cheese though.  You can easily pick up the ingredients from your local farmers market.

Dressing:

2 ounces blue cheese

3 Tbsp extra virgin olive oil

2 Tbsp red-wine vinegar

1 Tbsp finely chopped fresh tarragon or 1 tsp dried

1 Tbsp honey

1-2 Tbsp nonfat plain yogurt (Optional, but highly recommend)

Little pinch of salt and pepper to taste

1. Mash blue cheese, oil, vinegar, tarragon, and honey together in a bowl until well combined.  For a creamier dressing add yogurt and season with salt and pepper.

Salad:

1 cup nonfat plain yogurt

1 clove garlic, minced

2 Tbsp extra-virgin olive oil

2 Tbsp finely chopped fresh tarragon or 1 Tbsp dried

1 lb boneless skinless chicken breast

1 head of Any type of lettuce you prefer (I used half red leaf and half romaine)

1/2 head radicchio, cored and very thinly sliced

1/2 cup walnuts, chopped and toasted in skillet for 4 minutes, then drizzle honey on top and toast for 1-2 more minutes

Salt and pepper to taste

1.Preaheat oven to 350 Degrees F

2. Combine yogurt, garlic, oik, and tarragon.  Season chicken with pepper and salt.  Place chicken in baking dish and cover completely with the yogurt mixture.

3.  Bake until the chicken reaches 165 degrees F, 35-45 min.  When cool enough thingly slice the chicken.

4. Chop up the lettuce and radicchio and combine in a large bowl.  Top with sliced chicken, creamy blue cheese dressing, and honey glazed walnuts.

Super easy quick salad to fix for an appetizer, lunch or dinner.  Your guests will be amazed!

Do you have things in life you would love to do each day, once a week, or once a month but don’t have the willpower to do it? Well I do and will share with you the best way to form these into positive habits

My one habit that I started with this month is flossing my teeth every day.

The way to form this habit for me was to start a bet with my boyfriend. We have a calender in our bathroom. If you floss you mark the calendar with a sticker. The person with the most stickers at the end of the month wins. The loser has to take that person out to dinner and to the comedy club for some good laughs. I belive this will work because we both are very competitive people.  By the time the month is over we will hopefully have formed a postive habit of flossing our teeth every night 🙂

I will let you know how it goes. So far we are tied on the 11th day.
